Our cuisine

OUR INTERPRETATION

Our cuisine has a modern and updated vision but with the use of many local products. For us, it is important to enhance the quality of our territory. In some cases, we combine important national ingredients with Trentino products.

We have a restaurant menu with 4 starters, first courses, and second courses. In the menu, there are always both traditional dishes dedicated to guests who come from a little further away and some dishes for our guests from the Territory who want to discover famous recipes but revisited in the Trentino style.

The menu also takes into account the needs of Vegans and Celiacs.

Nuvole Trentine
What is it? A bit Pizza and a bit Pinsa. It’s our invention and it’s a dough between the Roman “Pinsa” and the more famous Neapolitan “Pizza” but revisited with Local ingredients.
We have as a base a special dough made of White Flour, Buckwheat Flour, and Yellow Flour. All three flours are from the Val del Chiese of Agri 90 and the dough is made with Mother Yeast and Beer Yeast. It has a round shape like the classic pizza with a medium diameter of 28 cm and a net weight of the base without the condiments of 240-260 grams.
The filling only with mozzarella fior di latte and a few Trentino ingredients. However, the Tomato is a San Marzano DOP. It takes patience for this dough because it requires 30 hours of leavening and two cooking steps.
